Start with the name of a type of sport/hobby and the next person adds another beginning with the last letter of the previous one.

e.g. Tennis

Sewing

Gymnastics

and so on

I'll start us off with Motor racing

Yes, and things ending in s. I couldn't think of anything beginning with g apart from gymnastics.
